Penne Pasta Bake
This recipe is a super quick one and will be a hit with kids and adults alike. It takes less than 30 minutes and makes a large dish, so you might even have some left over for lunch the next day!
Ingredients:
8 rash shortcut rindless bacon
500 ml passata
1 – 2 garlic cloves
1 large onion
300 ml cream
1 cup parmesan cheese grated
2 tbsp olive oil
500 gms penne pasta
Instructions:
- Boil water for pasta.
- Finely chop the onion.
- Cut bacon into thin strips approx 2cm x .1 cm.
- Heat oil in a large frying pan. A large electric frying pan works perfectly.
- When heated to a moderate heat cook bacon to desired taste.
- Add onion and crush garlic into the pan and cook for another couple of minutes.
- Place pasta into boiling water.
- Add pasta sauce to the frying pan and turn down the heat slightly. Allow to simmer for 3 – 4 minutes.
- Add cream to frying pan and mix well. Turn up the heat slightly, allow it to bubble then reduce the heat and allow it to thicken, then turn to low.
- Heat the grill on high.
- Drain the pasta.
- Add pasta to the frying pan and combine well.
- Pour the contents of the pan into a lasagne-style dish and even out the mixture. Top with the grated parmesan and place under the grill until the cheese has melted and is a golden brown colour.
- Serve with some warm garlic bread!
